A Leap of Faith


And I did just that ladies and gents.
For 2 years I sat on the fence about the job I held. I was so consumed with guilt about what may or may not happen if I just quit then and there. 
It became a nightmare to go in each day, it became a place I felt suffocated while there and dread would set in before ever pulling into the parking lot.
Don't get me wrong I absolutely loved the type of work I did but the place of employment was utterly exhausting.
I am not one to slander a company and this is a VERY well reputable one so we will leave it disclosed but just know you are only a number not an employee.
Welcome to Corporate America.

Back to my final go for it, after about 2 full weeks of brutal anxiety attacks, many tears and the hubs saying " I have this, just do it", I put my two weeks resignation in.
The next day was spent in an hour and half meeting with my boss who in turn had convinced me to just stay and try it out a bit longer.
I have to admit I walked out of there feeling a bit better, as if a new light was over turned and we could possibly (small possibly) make this work.
One week later as I sat at my desk and an email came through about some nonsense, I made a rash decision to pack up quietly leave my keys, parking badge and security badge neatly on my desk and without a blink walk out the doors to my LEAP OF FAITH.
(no I do not wish to hear your opinion on how I should not have done that, for all you hard core right doers)

I left that day with no idea what I was going to do for the money I would now be missing, or what my next move would be. I had several ideas in mind but no real plan of action no real sure fire way to say in the 2 weeks I now had until bills were due again there would be a way to pay them.
BUT 
I knew I was free! 
Free from the dread, the stress and the overwhelming daily struggle of hating your job.
I got in my car that day and sat there for a minute just to take in what actually just occurred and probably freak out a bit too. 

Taking a leap of faith felt oh so good but so damn terrifying all in one breath.
I went home that day feeling like the weight of the world had been lifted and now was my chance to start again and do anything I wanted to do.
BUT
what... what would I do?? 
Go back to the 9-5 brick and mortar roll where micromanagement was the key for success, reach out to the social media world and attempt to pull in some kiddos to provide childcare for or maybe I could try my hand at this fitness thing everyone else can do it why can't I after all health and fitness have always been a dream of mine, or maybe I could put my crafting skills to use and see what I could come up with there, the list in my head goes on and on.


Life is about not knowing, having to change, taking the moment and making the best of it without knowing what's going to happen next.

Needless to say I am nervous but I am going to think positive and make the most of this blessed opportunity that not everyone gets. 
I believe in turn this will show me what's next!

DIY Dunkin Donuts Iced Coffee

Hi all I'm alive, I'm alive :)

Image result for dunkin donutsOk so I know I am supposed to be losing this weight and all BUT I found this and had to share.It's just to damn good not to.
So if anyone wants to call me out on previous post just calm your tits cause what I am about to share with you will blow your mind and you too will be running out to the Kroger to get the stuff to make this. SO HA!! (insert me sticking my tongue out at you like one of the kids )

No lie though peeps Dunkin Donuts Iced Coffee is literally the next best thing to crack and since I cannot afford crack or Dunkin Donuts I have stumbled upon the greatest proportions of said addiction that's done right in your own home and for A LOT less moolah. (for the ones whom can't take sarcasm, NO I do not smoke crack!)

Google is truly your best friend when it comes to just about anything.
However use caution it can also be your worst enemy.
Any who I happened to find a lady who shared on food.com her DIY version of Dunkins Iced coffee, so I thought ahh what the heck I already had all the ingredients lets give it a go. And ohmygawdddd it is the perfect mix!

Watch out Dunkin this cheap skate is savin her pennies now.

Copy Cat Dunkin Donuts 
Iced Coffee
   4 ice cubes 
2/3 cup of coffee 
2/3 cup milk 
1 tablespoon of sugar
Directions: add sugar to cup, add ice cubes, pour in coffee, add milk and flavoring if you wish, give it a stir and ENJOY!

I tweaked it a bit for myself and used 2/3 C of almond/honey milk.
You can also add any flavoring you may want such as caramel.

World's BEST Zucchini Bread

Now I know everyone has their own preference when it comes to texture and so forth, BUT
this isn't just bread, this my peeps is the most moist, melt in your mouth, eat the WHOLE loaf by yourself bread.

!SERIOUSLY!

If you are a zucchini bread lover as I you HAVE to try this recipe, and please please pass it on, tell the world what they are missing.

Recipe:
Preheat oven to 325 degrees
3 c flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
3 tsp cinnamon
3 large eggs
1/2 c oil
1/2 c applesauce
1 c white sugar
1 c brown sugar
3 tsp vanilla extract
4 c grated zucchini (I just chopped mine really small in the chopper)
1 c chopped walnuts (optional)
 Recipe makes 2 loaves
DO NOT FILL PAN FULLY, about 1/4 from the top is great

Mix: flour, salt, baking soda, baking powder, and cinnamon in a bowl... set aside
Beat eggs, oil, vanilla, applesauce, sugars, zucchini and nuts together in a bowl
Slowly combine the wet ingredients with the dry, mix well

Grease and flour your 8x4 bread pan
Bake 50-65 min. My oven actually takes about 65 minutes
Poke the middle with a knife and when it comes out all clear you are good to go.
Remove from oven, let cool 20-30 min. run a knife around the edges to help it loosen from the pan, flip upside down onto a plate, turn it over and VOILA you got yo self some awesomeness!!

Easiest Homemade Apple Crisp thus far!

Made this Tuesday night and it is so so so so gewd. Mmmmm Mmmm !

Topping
1/2 cup flour
1/2 cup old fashioned oats
1/2 cup brown sugar
1/2 tsp baking powder
1/4 tsp ground cinnamon
dash of salt
1/3 cup unsalted butter, diced into small chunks

Filling
3-4 large Granny Smith apples, peeled and sliced thin
3 Tbsp butter, melted
2 Tbsp flour
1 Tbsp lemon juice
3 Tbsp milk
1/2 tsp vanilla extract
1/4 cup brown sugar
1/2 tsp ground cinnamon
dash of salt

Instructions
Preheat oven to 375 degrees F.
In a medium size bowl combine the crumb topping ingredients with a fork or pastry blender until it resembles small crumbs. Refrigerate while you prepare the apple filling.
For the Apple Filling

In a small bowl, combine melted butter and flour until well blended. Add lemon juice, milk and vanilla and stir well. Stir in brown sugar, cinnamon, and salt. Pour butter mixture over apples and toss to coat. Pour apple mixture into an 8x8-inch baking dish and spread into an even layer. Sprinkle crumb topping evenly over the apples. Bake for 30-35 minutes or until golden brown and top is set. Remove from oven and allow to cool for at least 10 minutes before serving.

Mmm Mmm Good

Lets call this--- Mama's Chicken Wrap
And NO you may not poke fun of the beautiful plate. Do you seriously think we let monkeys use good shiz?? :)


1. Left over fajita spiced chicken from last nights din din.
2. 2 pieces of lettuce, big enough to hold the good stuff.
3. 2 tbs of black beans
4. A pinch of shredded Colby Jack cheese
5. Tbs of fresh salsa
6. And one 16 oz bottle of H2o
